One way to make — Mutton Dum Biriyani

A mallu recipe.

Ingredients

  • Coconut oil — 4 tbsp
  • Onions — 9 sliced
  • Ginger-garlic paste — 3 tbsp
  • Green chilli — 12 slit
  • Coriander powder — 4 tbsp
  • Chilli powder — 1.5 tsp
  • Turmeric powder— 1 tsp
  • Tomato — 4 Indian or 3 Roma
  • Mutton — 1 kg cubed big
  • Salt
  • Rice (Basmati or Jeerakasala) — 2 cups washed
  • Cinnamon — 4 logs
  • Cloves — 8 pc
  • Star Anise — 5 pc
  • Bay leaf — 2
  • Lemon juice — 3 tbsp
  • Ghee — 5 tbsp
  • Coconut milk — 0.5 can mixed with equal parts of hot water
  • Cashew — 3 tbsp roasted in ghee
  • Raisins — 3 tbsp roasted in ghee
  • Coriander leaves — 3 tbsp chopped
  • Mint leaves — 3 tbsp chopped

This recipe has 3 phases — the curry phase, the rice phase, and the Dum phase.

The Curry Phase

In a pressure cooker with the lid off, heat 4 tbsp of coconut oil on a medium flame. Once the oil is hot, add 6 onions sliced thin and saute until they become translucent. Add 3 tbsp of ginger garlic paste and 10 slit green chillies…
