A Mallu recipe.

This recipe is almost identical to the Beef Fry recipe with the exception of a few ingredients. As mentioned in the previous recipe, the most important part of the recipe is the meat itself. For best results, equal parts of fat and meat are required. I have used Pork Belly and Boneless Pork Ribs here.

Pork Varattiyathu with Malabar Porotta

Ingredients

  • Pork Belly — 0.5 kg (1 pound approx.)
  • Boneless Pork Ribs — 0.5 kg (1 pound approx.)
  • Salt —4 tsp
  • Turmeric Powder — 3/4 tsp
  • Black Pepper Powder— 3 tsp
  • Chilli Powder —3 tsp
  • Coriander Powder —2 tsp
  • Fennel Powder — 3 tsp
  • Meat Masala / Garam Masala — 1 tsp
  • Onion — 2 large sliced
  • Ginger Garlic paste — 2 tbsp
  • Curry Leaves — 3 or 4 stem
  • Green Chilli — 5 pc sliced
  • Coconut Oil — 2 tbsp
  • Mustard seed — 1 tsp
  • Sliced coconut — 1/4 cup (optional by highly recommended)
  • Lemon — juice from 1/2
